Fish protein hydrolysate is a mixture of degraded proteins obtained by the protein hydrolysis of fish material or fish. The hydrolysis process breaks down the proteins which make up fish tissues into smaller peptides and finally into amino acids. The product is obtained by treating fish meat with enzymes such as alcalase, chymotrypsin, pepsin or trypsin.
 

These substances are generally soluble, free-flowing spray dried powders which contain about 2–20 amino acids. The amino acid content of these products depends on the enzymatic parameters such as pH value, time of reaction and type of enzyme. They are also produced in liquid form, which is a watery mixture of hydrolyzed proteins difficult to transport and unstable for prolonged storage.
