It is used under the E number E466 in food industry. It is more tolerant to ethanol as compared to other food gums, which makes it suitable to be used in low alcohol content beverages.
CMC is used in ice creams to form a uniform, smooth and stable mixture of fats, water and protein, which greatly reduces the production cost. In beverages, the cellulose gum is used to prevent layering and precipitation, which improves the taste. It is an excellent water retention agent, tablet base, emulsifier and an adhesive.
